Grilled Ribeye with Herb Compound Butter

This is a tardy post from last weekend. This was my last supper before I started studying for the California Bar Exam (pun intended).

I made a grilled ribeye steak with a homemade herb compound butter (herbs straight from our garden).

We had that with an arugula salad tossed with roasted beats, strawberries, almonds, Feta cheese and some delicious 20-year aged balsamic.

We washed that down with one of
favorite wines: the Ridge Vineyards Jimsomare.

We also had some tasty Brie.

Delicious Last Supper.

Burgundy Braised Short Ribs with Roasted Fingerlings and Patty Pan Squash

Tonight we had Kathleen’s mom over for dinner. I made burgundy braised short ribs. I served them with garlic herbed roasted fingerling potatoes and oven-roasted patty pan squash with thyme and rosemary.

The short ribs fell right off the bone. Very tasty.

We also had a 2005 Gevrey-Chambertin Champonnet.

Citrus-Ginger Flat Iron Steak with Honey-Mashed Beets and Crispy Kale

Last night we made citrus-ginger marinated, grilled flat iron steak. The steak marinated for an hour in a combination of fresh citrus juices (grapefruit, orange juice, lime juice), soy sauce, fresh ginger and a few other spices. It was delicious.

We served it with honey-mashed beets that also had a touch of ginger in them. We also made crispy kale chips topped with a terrific fleur de sel we brought back from our honeymoon in France.

Kathleen’s Post Half Marathon Meal

Kathleen kicked butt in the San Diego Half Marathon Sunday! She finished in an incredible 2:03!

For her post-half-marathon dinner I made her grilled ribeye steak with a parsnip puree and a roasted golden beet and feta cheese salad. Yummm.

Chili Night!

This morning I got up early to make Kathleen’s favorite! The chili is three parts meat (1/2 beef, 1/2 spicy italian sausage), to one part beans. After eight hours of slow-cooking, I finish it with corn for the last 20 minutes. The secret ingredients in this chili recipe are unsweetened cocoa and a dark mexican beer. Tasty even on a warm day.

On New Year’s Eve (photos to be posted soon) we went to one of our favorite spots – Bankers Hill Bar and Restaurant. Even on a special occasion, and while everyone else chose more refined menu options, I opted for the burger…my favorite in San Diego…

Tritip with Ricotta Mashed Sweet Potatoes

Tonight we had barbecued tritip with ricotta mashed sweet potatoes and provencale green beans. I have made Kathleen mashed sweet potatoes many times but the ricotta was a new twist. It turned out great.

The wine was one of our go to affordable choices, the d’Arenberg Laughing Magpie. It went especially well with a fire burning in the fireplace on a chilly San Diego evening. Packers fans brought the cold with them apparently.

Kathleen baked a homemade banana bread with sour cream.
